Moving madness

Phew! The moving is done, well for another few months anyway. I am so excited that our renter finally signed an agreement to move out by March 1st, however this means that we will have to move, yet again. We are hoping to renovate our new place a little before we move in, so come the New Year I will be busy organising flooring and other exciting things. For now, I am getting used to our temporary space and new schedule. It is so wonderful to be close to Harry's school and walk when we can. We are also in Glenmerry, the same suburb as our new house. I think this move was a little harder on me than I expected but this week things are feeling a lot better. In the past few weeks amidst all the moving chaos we found some time to relax still.

* Harry is loving learning to read and write. He is practicing all the time. Kevin was busy cooking dinner one night and Harry wrote this letter to my mum by himself. It really is amazing what children can do when they are interested.

* My friend took me on a girls weekend to Spokane, USA. It was the first time I have been apart from my boys for more than 1 night. I was a bit upset to start with but Kevin had a blast with the boys taking them skating, swimming, hiking and feeding them food that mummy doesn't usually allow! Leah and I went to see the Lion King, had dinner in a fancy restaurant (that didn't serve grilled cheese sandwiches!), I rekindled my love affair with Mojitos and we shopped for Christmas presents. It was a relaxing and fun time....just what this stressed out Momma needed.

* Oh the joy of setting up the Christmas tree and decorations. It is so exciting with the boys being that little bit older now and explaining where all the Christmas ornaments came from. We got our tree from a friends farm and it is just perfect. Thanks guys!

* We celebrated Gail's birthday in early December. Melanie and I made her a frozen yogurt cake. It was pretty yummy and easy to make. I got the recipe from a book my mum gave me years ago "purely Golden Door". She got it at this amazing retreat called the Golden Door and they had a cook book filled with their yummy low fat treats.

almond and fig torte with mango & tropical sorbet
Torte
¼ cup carob powder
1 cup apricots
1 cup died dates
½ cup of shelled whole almonds
1 cup best quality dried figs
1 teaspoon orange zest
½ tablespoon orange juice
2 litres of low fat sorbet/frozen yogurt (2 different flavours, 1 litre of each)
1½ punnets blueberries, frozen

Method:
1. Blend almonds, apricots, figs and dates in a food processor until resembling rough breadcrumbs. Add zest, orange juice and carob and blend for a further minute.
2. Remove and place mixture between 2 pieces of greaseproof paper approx 40cm x 40 cm.
3. Using a rolling pin, roll the mixture to a 2 mm thickness.
4. Remove the top sheet of baking paper and cut 2 discs to the diameter of the spring-form tin you are using.
To Assemble
Cut a piece of greaseproof paper to cover the bottom of the spring-form tin. This dessert is made upside down in the tin. Firstly, lightly cover the bottom with frozen blueberries, then spoon 1 litre tub of slightly softened sorbet on top of the berries, add one disc of fruit and nut mixture on top of the sorbet and freeze for 1 hour to firm up the sorbet. Repeat sorbet, then fruit and nut disc and freeze for 4 hours. Remove from mould and turn up the right way. Garnish with extra tropical fruit and mint leaves!

* The boys took me on a hike last weekend to their new 'spot'.

You see, while I was away they were exploring the mountain that backs onto our soon to be new home. They have picked out the perfect spot for a cabin that daddy is going to help them build.

We explored a place beside it too that they have named Monster Rock Gully. It was a fun but very cold hike! I think the thermals are definitely coming out of the box this week.

Oh my goodness, you poor thing. I guess you must really be streamlining your possessions though? And looks like you're finding time for some good wholesome (and not so wholesome - mojitos) fun! How was Harry's birthday? Gail's cake looks delicious - I bet you girls had fun making it together. It's so much more enjoyable that way. xx
